The idea for Herb&Olive was born during a Memorial Day gathering between Julia's family and George's family in 2017. The two families discussed the high-quality food products available in Athens and the scarcity of such products nearby. They then agreed to bring an Athenian-style specialty market, typically including a dining area, to Long Island. Serendipitously, the old Mykonos became available within weeks, and a lease was secured in September. With support from partners like Yolenis and Despana, as well as an amazing design team, Herb&Olive opened two years later.

Julia Rose Petropoulos, the founder of Herb&Olive, is a third-generation Philadelphian with roots in what is today the Republic of Turkey. She was born into the restaurant business and has a deep passion for Mediterranean cuisine. Julia and her business partner, George Vatakis, who was also born into the restaurant business on the Aegean island of Chios, which has substantial Italian and Turkish influences, live in Manhasset with their families, and are deeply involved in the local community.
