Greg was born in New York and spent most of his career in the beer business where he learned the trade and craft for almost 30 years. A New Yorker by heart now living in Arvada, CO. with his family since 2019 Greg’s intentions are to bring you the bagel and schmear he grew up with - honing in on the best bagel shops in NY including Utopia, Ess, and Murray’s.
These bagels are made to order from scratch – using the highest protein flour, liquid malt, and filtered water. They aren’t machine made or bought at a store. I hand-roll each one, seed them in a mix, boil them on each side, and then bake them! Thus, no two bagels look alike! It may seem odd at first because everyone is so used to the even-shaped bagel circle bought from an industrialized maker!
But give it a taste is it crunchy outside, soft chewy, and dense inside with no crumbs? Not over-puffy with yeast and just the right amount of barley malt? Then I did it!
